Hot Spinach Salad

Vinegrette:
1/4 cup balsamic vinegar
3/4 cup olive oil
tablespoon of Dijon mustard
honey to taste
3 pieces of bacon, crumbled
bacon fat :p

Salad:
Spinach 
 Diced tomatoes
Fried cheese ball: Gorganzola and Cream Cheese
or Goat Cheese
(flour the cheese, coat with egg wash, then bread crumbs)
